[HELP] [1978 SR500] Got it running, need advice on tuning

Hey everyone, long time no see! Last I was here I was having ignition problems on my SR500 and had to send the stator to be rewound twice by the folks over at rex's speed shop. I ended up losing the stator (awesome) and so I bought a new one and I just installed it and got the bike running again for the first time in about a year.

The thing is it's running a bit rough. I'm thinking it could be:
  • Old fuel in carburetor
  • The gross spark plug I put in to test it (gotta get a new one)
  • Ignition timing issues

My question is when I install a new stator and flywheel on to the bike, do you need to do anything with ignition timing? If so, how would one do that? I've attached a couple videos for you guys to see what it sounds like to you. Thanks in advance for the advice! Great to hear from you all again.

Lots of things to exclude, but hard to say whether or not it is spark.

Not familiar with this engine, but it is a 4 stroke. I see it has adjustable lash for the valves.
Are the valve lashes within spec and is the tensioner and chain in good shape?
