I have a DT360 Yamaha. I have a question about the splitter for the throttle and oil injection cable. Do the cables go in from the bottom or the of the splitter? thanks

Seems you're really struggling with that cable... and it's not clear to me exactly what you're asking or why. The original splitter doesn't seem to be mysterious or like there's any question how it could go together? So I'm guessing you might not be telling us the whole story?
There are several variations of splitter design, both OEM and aftermarket, over the years. Not sure exactly what you have.
The ORIGINAL 1974 DT360 cable has the throttle and oil pump cables somewhat "permanently" connected to the splitter tube... While they sometimes crack and come apart... the lower cables came installed into the tube and were not designed to be removed from the tube.
The single upper cable to the handlebars has the cap for the splitter tube on the outer sheath and a white disc on the inner cable.
With the lower cables disconnected from carb and pump, you push their inner cables so they come out of the top of the splitter tube. Then you simply attach the lower cables to the white disc of the upper cable. Snap the cap on the tube and cable assembly is done. Install and adjust cable.

I bought a new cable from HVCcycle. I had to have it modified because I need a 45 on the carb end. The cable came with a straight end which hits the frame. The hvc cable seems to be inserted from the bottom side where as the original cable is opposite of that. It.

I've never heard of anyone having a problem like you are with the HVC cable. I pretty sure this has been discussed with you before but the 45 degree elbow on top of the carb is NOT a part of the throttle cable! So the HVC cable should be straight... and the inner cable will be too long without the correct elbow.
It's great that you're trying to hack something together that might work, but it really isn't that hard to use parts that will fit without modifications.

The cable from HVC had a straight end. I took another look at HVC's website and it does show a 45.The above picture is what I need.
