If it was my bike, I would pay the expense to have the pearl white paint done, as it is the signature color for the highly sought 68 DT1. After that, I would just do the best I could to make it a decent looking rider.
It's better to remain silent and be considered a fool than to speak and remove all doubt.

I think only you know what is best for you. I prefer ~mostly original bikes but I try to use as many original parts as I can.
If that were my bike, I would get a front fender, clean it up, add some aftermarket rear shocks, paint up the fenders, tank, clean the frame ( looks pretty good on paint, maybe clean up swingarm), get motor running. For THAT bike, IMO, it would still be worth a lot later in that condition.
Disclaimer: I'm not exactly the fastest restorer.

The facts are we all are getting older and the guys who rode and loved this bike are becoming just like the parts for the 68's, harder and harder to find. So, fix it up to as close to original as you can for now and enjoy riding it as much as you can. Keep and eye out for the original parts you want and get them when you can. But we all know the most joy comes from riding these bikes and sharing our adventures with like minded advocates. Be Happy!

I agree ride em and be happy. We'll never treat them like we did first time around because we aren't able to. If happy is lookin at it in the corner of the den or garage then do it. You can't beat riding them though.
