What about under no load?
If it is on the kickstand, can you turn the throttle WIDE OPEN and it will rev freely up to 7k and beyond?
Does the bog under load only happen when the throttle is wide open at 5K?
Can you slowly open the throttle UNDER LOAD and the rpm will increase? No bogging if you slowly increase the throttle?

Not tried opening the throttle wide on the kick stand as it's been totally rebuilt, new piston etc. Yes it bogged down when I took it out to do a hot plug swap, eased off to let traffic pull away then increased throttle and it bogged down, not sure as to the revs as was more concerned with traffic bearing down on me.

You may find your metering needle/main jet is too rich or your timing is retarded (or not advancing).
Depending on which 12v system you installed, it may be the issue.

I think DEET has seen a number of folks who have experienced issues with the Rex kits. I know of several that are working wonderfully, but I know ai have read of some on here that have had issues. Your symptoms certainly could be ignition related since it seems to run fine at low rpms . . .
IF it isn't one thing, it's another.

Had a gallon in 9 minutes, don't know where to go now, bike was running poorly on the 6v ignition also.

Basic advice is to first CLEARLY identify under exactly what SPECIFIC conditions the problem occurs.
Engine should be warmed up.
Will it rev properly all the way to redline with slight throttle opening in neutral? Or does it act up at a certain RPM? Can you accelerate slowly to redline in first gear at light throttle opening (less than 1/4 throttle)? Things like that.
What you are looking for is data on the RPM and very importantly, exact throttle setting when the problem occurs. It's helpful to mark the throttle grip and housing with tape and index marks to identify 1/4, 1/2, and 3/4 throttle openings.

Tried it on the side stand as deet asked, revs to just over 5k then bogs down,
