pros and cons of becoming involved with an SC500?

While I am mostly interested in Enduros that I can legally ride around town, this one is intriguing 

any thoughts on pros and cons appreciated

Don't even think about it!!. At work we set our shop SC up as an enduro, street legal just to get it to sell after a season of MX. It was bl__dy awful. Sold on its scary reputation though lol.
They were never a torque'ee motor anyway with a 70mm stroke & just about a 100mm bore sitting on top.

Parts like the piston are getting pretty expensive...  if you can find one.

I bought a SC500 new in 1973, rode the heck out of it for 2.5 years, I also restored one a few years back. There’s a few tricks to do, and like MarkT says pistons are becoming rare and expensive.
